Indonesian coffees are prized for their heavy body, rich character, and earthy flavor profile. Our Sumatra has all of these. This coffee is Wet Hulled, meaning the thick skin of the cherry is removed exposing the thick mucilage covering the seed. The fruit is then dried in the sun before the seed inside is removed. This process, which differs from the Washed (wet) and Fully Natural (dry) processes, imparts the creamy richness and earthy body Sumatra is known for. To accentuate these characteristics, we roast Sumatra a little bit hotter and slightly longer to allow the depth of flavors to fully develop.
