Ethiopia is very special to the world of coffee, as the origins of the coffee plant can be traced to this prominent East African country. Within coffee’s Motherland is our favorite appellation, named for the town of Yirgacheffe. We take great pride in honoring the historical significance of this locale by offering a Natural Processed heirloom varietal Yirgacheffe. The heirloom cultivar is indigenous to Ethiopia, and the Natural Process is the most fundamental, traditional, and antiquated method to prepare coffee for eventual roasting. You might find a few rust colored beans in your bag of chestnut brown beauties. These beans are what’s known as “quakers”, a result of under-ripe coffee cherries which aren’t sorted out in the Natural Process. Quakers don’t contain the adequate sugars necessary for caramelization during the roast cycle, unlike a fully mature cherry. On their own they taste a bit like peanuts, but in the highly graded Ethiopia Yirgacheffe Natural favored by Cutbow, the overall quality of the cup is not at all compromised. We carefully roast our Natural Process Ethiopia to its sweet spot, where the fruity character it contains is brought to a delicious crescendo. This coffee is extremely fragrant and never fails to impress redolence in the cup.
