Guatemala Antigua is one of our favorite single origin coffees. When buying raw green coffee, one of the most important factors we consider is elevation of the farm where it is grown. High grown coffee is extremely dense, hence the designation Strictly Hard Bean or SHB. This feature enables us to apply a higher temperature when roasting than a softer, less dense, lower grown coffee would withstand. With an aggressive roast approach, our Guatemala reaches full development relatively quickly. This aggressive approach ensures the caramelized sugars retain their inherent sweetness with more clarity, resulting in a perfectly smooth and balanced cup.
